Brewing Our Tea
Use one tea bag or 1-2 teaspoons of leaves (depending on
your taste) for 2 cups of brewed tea.
For BLACK TEA, pour fresh, boiling water directly on the
leaves or bags in a prewarmed pot. Steep the tea to suit your taste but it
is recommended that BLACK TEA needs a full 4-5 minutes for loose leaves, a
bit shorter for bags.
GREEN TEA typically should be brewed at a lower
temperature than BLACK TEA because it's more delicate. Pour fresh water on
the leaves or bags just before it boils. GREEN TEA should steep about 3
minutes or to suit your taste. Be aware, however, that longer brewing
tends to increase bitterness, not flavour.
Tea Storage
Keep in a cool, dry place in an airtight container to
preserve it's freshness and to keep out odours and other flavours.
Teapot Types
We recommend a BODUM tea press teapot. It has a wide
bottom to enhance stability, a high spout to fill it to the brim and a
snug lid to retain heat. The infusion basket holds the leaves in place and
allows tea drinkers to see the "agony of the leaves", a term experts use
to describe leaves as they unfurl in hot water.
Health Benefits
There is mounting evidence to suggest a link between tea
consumption and better health. Some scientists now believe that the
antioxidant properties of tea may have a role in protecting against
certain diseases such as cancer, stroke and heart disease. It can also
help improve digestion.
Tea Quotes
"The first cup moistens my lips and throat. The second
shatters my loneliness. The third causes the wrongs of life to fade gently
from my recollection. The fourth purifies my soul. The fifth lifts me to
the realms of the unwinking gods." Chinese mystic (Tang Dynasty)
"There is a great deal of poetry and fine sentiment in a
chest of tea." Ralph Waldo Emerson
"Better to be deprived of food for three days, than tea
for one." Ancient Chinese Proverb
